Pappardelle with Bolognese Ragu
Authentic Bolognese ragu with meat, soffritto and hours of slow cooking over wide pappardelle.

Finely chop onion, carrot and celery for soffritto. 2. Sauté vegetables in olive oil until tender. 3. Add minced meat and cook until well browned. 4. Pour red wine and let alcohol evaporate. 5. Add crushed tomato and milk, simmer 2-3 hours. 6. Cook pappardelle in salted water until al dente. 7. Toss pasta with ragu and serve with grated parmigiano.
