Tuna Tataki with Yuzu Sauce

Sear the tuna in a very hot pan for 30 seconds on each side, leaving the center raw.

Let the fish rest in the freezer for 10 minutes to facilitate cutting.

Cut into thin slices approximately 5mm thick with a very sharp knife.

Prepare the sauce by mixing yuzu, soy sauce, sesame oil and grated ginger.

Arrange the tuna slices on a cold plate and drizzle with the yuzu sauce.

Garnish with chopped scallion, sesame seeds and edible flowers before serving immediately.
