Punjabi Chana Masala
North India's most famous chickpea curry: toasted spices, caramelized tomatoes and tender chickpeas in a rich, aromatic sauce. Comforting, nutritious and vegan.

✓Tomates maduros4 grandes

✓Ghee60g

✓Semillas de comino2 cucharaditas

✓Jengibre fresco30g

✓Ajo6 dientes

✓Chiles verdes2 unidades

✓Cúrcuma1 cucharadita

✓Chile en polvo1 cucharadita

✓Garam masala2 cucharadas

✓Jugo de limón2 cucharadas

✓Cilantro fresco30g

✓Salal gusto
Instructions

Soak chickpeas for 12 hours. Drain and set aside.

Heat ghee in a large pot and fry cumin seeds until they sizzle.

Add chopped onions and cook until golden.

Incorporate ginger, garlic and green chilies. Cook 2 minutes.

Add tomatoes, turmeric, chili powder and salt. Cook 5 minutes.

Add drained chickpeas and garam masala.

Add enough water to cover chickpeas.

Cook on medium heat 45-50 minutes until chickpeas are tender.

Lightly mash some chickpeas to thicken the sauce.

Add lemon juice and additional garam masala.

Adjust salt and cook 5 more minutes.

Serve hot garnished with fresh cilantro, raw onion and lemon wedges.
