Cut the duck into portions and season with five spices and salt.

In a pot, boil water and blanch the duck for 2 minutes.

Drain and completely dry the skin.

Mix honey, soy sauce, and vinegar for glazing.

Place the duck on a tray and bake at 180°C for 40 minutes.

During cooking, repeat glazing every 10 minutes.

The skin should be crispy and caramelized.

Cut into thin slices and serve with pancakes and pickled onions.
