Fresh Vietnamese salad with rice noodles, aromatic herbs, crunchy vegetables and fish-lime dressing.

Cook rice noodles per instructions, drain and rinse with cold water. 2. Prepare dressing: mix lime juice, fish sauce, sugar and warm water. 3. Cut cucumber into thin julienne and shred carrot. 4. Chop fresh herbs: mint, cilantro and Thai basil. 5. Add fried tofu cubes or grilled pork slices. 6. Assemble noodles in bowl, add vegetables, herbs and protein. 7. Pour dressing over and garnish with crushed peanuts.
