Asturian Fabada
The comforting Asturian stew with Fabes beans, compango (chorizo, morcilla and bacon) in a silky broth that begs for crusty bread.
Ingredients

✓Fabes de la Granja500g

✓Chorizo asturiano200g

✓Morcilla asturiana200g
-
✓Tocino150g
-
✓Cebolla1 unidad

✓Ajo3 dientes
-
✓Azafrán en hebras1g

✓Pimentón dulce1 cucharadita

✓Salal gusto
Instructions

Soak Fabes beans overnight in cold water.

In a pot, cover beans with cold water and bring to boil.

Add compango: chorizo, morcilla and bacon.

Chop onion and garlic, add to pot.

Skim the surface during the first 20 minutes.

Cook over low heat for 2 and a half hours.

Add saffron and paprika.

If too thick, add cold water (the scare technique).

Season at the end of cooking.

Let rest 15 minutes before serving.
