Instructions

Dredge shanks in flour and shake off excess.

Sear in very hot oil on both sides.

Sauté chopped onion, carrot and celery.

Add white wine and let reduce.

Add tomato and beef stock.

Cover and cook over low heat for 2 and a half hours.

Prepare gremolata with lemon zest, garlic and parsley.

Turn shanks halfway through cooking.

Serve over risotto alla milanese.
