✓Garrofó (alubias blancas grandes)150g

✓Tomate maduro rallado100g

✓Aceite de oliva150ml

✓Pimentón de la Vera1 cucharadita

✓Azafrán en hebras1g

✓Agua1.2 litros

✓Salal gusto

Heat oil in paella pan over medium heat.

Brown chicken and rabbit pieces until well coloured.

Add green beans and garrofo, saute 5 minutes.

Add grated tomato and cook until darkened.

Add paprika and saffron, stir quickly.

Pour hot water and boil 20 minutes.

Add rice in cross shape, distribute evenly.

Cook on high heat 10 minutes, then low heat 8 minutes.

Rest 5 minutes before serving.
