Beef Bourguignon
France's most celebrated stew: beef braised in red wine with carrots, mushrooms and pearl onions, perfectly tender.

Cut beef into 5 cm cubes.

Marinate in red wine with herbs overnight.

Drain and pat dry the meat.

Sear pieces in very hot oil.

Sauté chopped vegetables.

Add wine from marinade.

Cover with broth and cook 3 hours on low.
