Indonesian Rice and Coconut Bubur Sumsum
Indonesia's comforting breakfast: creamy glutinous rice porridge with coconut milk, sweet corn and pandan aroma. Sweet, soft and comforting.

✓Arroz glutinoso200g

✓Leche de coco800ml

✓Agua400ml

✓Maíz dulce150g

✓Azúcar de palma100g

✓Sal1/2 cucharadita

✓Extracto de pandan1 cucharadita

✓Coco rallado tostado50g
Instructions

Soak glutinous rice for 4 hours. Drain well.

In a large pot, bring coconut milk to a simmer.

Add drained rice and water. Cook 20 minutes stirring.

When rice is tender, add sugar and salt.

Cook 5 more minutes until slightly thickened.

Add sweet corn and cook 3 minutes.

Remove from heat and add pandan extract.

Let rest 10 minutes before serving.

Serve in hot bowls.

Decorate with toasted shredded coconut.
